Some teas especially flavored ones are prepared below the water boiling point so as to release their aroma gradually whereas you need boiling water all the time for the rest of the things. Because this is a twin tank model, tanks can be set to different temperatures, perfect for brewing black teas at 98°C and green teas at 71°C.
